Si solo queda un persistence.xml sin lista, todo funciona bien pero necesito 2 unidades ...
También trato de encontrar una solución alternativa para el trabajo con dos bases de datos en el contexto Spring + Hibernate, por lo que agradecería cualquier solución.

Sugiero que el uso solo dataSource, dataSourceRemote (sin sustitución) no funcione. Ese es mi último problema.
- crear múltiples entityManagerFactory correspondiente a cada unidad de persistencia.
- especificar propiedad unitName para @PersistenceContext
cambiar entre esos entityManagerFactories aquellos serán inyectados

Your entityManagerFactory
no especifica persistenceUnitName
propiedad persistenceUnitName
. Tienes que hacerlo explícitamente porque estás definiendo más de una unidad de persistencia y entityManagerFactory
tiene que saber cuál usar.

En su contexto de primavera:

En sus DAO gestionados por Spring (tenga en cuenta la propiedad unitName):
@PersistenceContext(unitName = "pu1"`) protected EntityManager entityManager;
De esta forma, un EntityManager correctamente intacto que corresponde a la unidad de persistencia llamada "pu1" se inyectará en los DAO correspondientes.
Resolví el problema (Cómo conectar varias bases de datos usando Spring e Hibernate) de esta manera, espero que ayude :) NOTA: He agregado el código correspondiente, gentilmente haga el dao con la ayuda de impl que utilicé en la lista de abajo mencionada código.

- persistence.xml, defina una segunda unidad de pesristence para su segunda base de datos.
- spring.xml, defina un segundo bean entityManagerFactory con un nombre diferente, digamos "entityManagerFactoryDB2" y configúrelo para usar la unidad persistente para la segunda base de datos.
