Aquí está la implementación completa que eventualmente usé para enviar eventos cuando los auriculares están conectados (y desconectados).
Había una gran cantidad de complejidad con la que tenía que lidiar para garantizar que las cosas siguieran funcionando después de que la aplicación fuera devuelta desde el fondo.

Durante una prueba, un cliente notó que la reproducción de video en el iPhone se detiene cuando los auriculares están desconectados. Quería una funcionalidad similar para la reproducción de audio, y tal vez la capacidad de mostrar un mensaje.

La solución Swift 3.0 @ snakeoil:
NotificationCenter.default.addObserver(self, selector: #selector(YourViewController.yourMethodThatShouldBeCalledOnChange), name: NSNotification.Name.AVAudioSessionRouteChange, object: nil)
Esto cambió con iOS 7, solo necesita escuchar la notificación llamada AVAudioSessionRouteChangeNotification
